I’m struggling with meal planning at the moment for several reasons.
The first reason has something to do with a newborn… why are they always grumpy when it’s time to cook dinner? I don’t know how Rainbow is going to be from day to day. I do know, though, I have to feed the other hungry buggalugs in the house though… This is where this image comes in.
The second reason is I’m so uninspired. I see Facebook feeds of my friends full of delicious looking dinners but realistically, I can’t devote much time to cooking at the moment. (Toddlers who insist on breaking out of the living room while you struggle with a miserable baby and a temperamental oven don’t help either).
The third reason is a product of my fear. Rainbow is 10 weeks and has already been admitted into hospital twice… who is to say it won’t happen again? I’m therefore trying to plan meals that are either a) easy for hubby to cook or b) they can be chucked in the slow cooker and left all day. Doesn’t leave me with much that I fancy.
With this in mind, what have I planned for dinner this week?
Chicken Nuggets & Chips
Sausage, Mash & Gravy
Meatballs in Tomato Sauce & Spaghetti
Pizza & Chips
Fish, Mash & Peas
I’m looking forward to a hopefully easy week this week. No more hospital stays, a happier baby and time to cook…
