
17/11 – What’s for dinner this week?
I can’t believe Monday is here already! It seems like I only wrote last week’s meal plan 5 minutes ago.
We’ve had a rough week; Princess Pants has had tonsillitis and Comma has had Bronchiolitis. I haven’t been able to move for him so cooking has proved exceptionally difficult.
The meals I had planned were:
- Beef Roast
- Mummy FC
- Slow Cooked Sausage Casserole
- Cheese & Potato Pie
- Shepherd’s Pie
- Coq Au Vin & Rice
We actually ate:
- Monday – Beef Roast
- Tuesday – Mummy FC
- Wednesday – Shepherd’s Pie
- Thursday – Sausage Sandwiches
- Friday – Coq Au Vin & Jackets
- Saturday – Dominos
- Sunday – Cheese & Potato Pie with Bacon
What is on the menu this week?
Beans on Toast – I’m taking the cheat’s way out this Monday. With swimming lessons and not getting home until 5pm I need something super quick and easy.
Slow Cooked Beef Casserole served with Rice – Read beef stew… It’s another one I love to cook and is slightly different from my usual Beef Stew. It has different vegetables and is served with rice rather than bread.
Slow Cooked Pork Dinner – With all the trimmings, I can’t wait for this meal.
Slow Cooked Sausage & Potato Casserole served with bread rolls – This is an oldie but a goody. We all love it and it is perfect for cold winter evenings.
Slow Cooked Hunters Chicken and Green Vegetables – I LOVE LOVE LOVE Hunters Chicken. Nom nom nom… I’m already eating it now.
Fish & Mash – The kids love this one. As do I! It’s a relatively quick and simple meal to prepare as well.
Fingers crossed, this week Comma will be more like his normal self which will mean I can get back in the kitchen and get my house back in order all in the same week.

It wasn’t really easy but I managed it! My slow cooker is invaluable and babywearing helps a lot too!

OK, I am intrigued – what is Mummy FC?! Free cook, maybe? Best wishes to all for better health this week. It really throws a spanner in the works when kids are ill. I am going to try the Potato and Sausage Casserole – sausages are always a hit when you have three boys!

Haha… Mummy FC is a KFC but cooked by Mummy. Skinny fries, Boneless Southern Fried Chicken pieces, dips, sides… It is always a winner (and slightly healthier).
They all seem to be better this week thankfully.
Sausages are a winner, I agree. the Potato and Sausage Casserole is great!

I hope so too. Although, I currently have Boyo sat on the sofa next to me. He woke up feeling not too great. Fingers Crossed he is better tomorrow.
